This quick and simple recipe was a game changer for my busy morning routine. It’s a great healthy and hearty meal to start the day with, and everyone of all ages loves it. We go back and forth between cream of wheat and oatmeal at our house, so we don’t get tired of either one.
Milling the wheat
You will want to mill the wheat coarsely for this recipe. On my Komo grain mill, the line is about center on the scale. I don’t know what that would be on other grain mills though, so it’s you’re judgement call. You can always grind coarser wheat finer, so when in doubt, start out coarse and regrind it if you want finer.
Choosing the wheat berries
This is a great recipe to use ancient grains in. I love using Einkorn and Kumut, but you can’t go wrong with any type. I also use sprouted wheat for this recipe, but that’s my preference. It won’t make a difference with the end result.
Method
This recipe is so easy, my 6 year old can make it. Once your water comes to a boil, slowly pour in the wheat while you whisk it. Using a whisk helps break up and lumps that might form when you add the wheat. If you like a runnier porridge then add less wheat then the recipe calls for. It only takes a couple of minutes for it to cook and then it’s ready to serve. Serve it with cream, butter, and sweetener of your choice. Our family typically sweetens it with sucanat, or maple syrup, but my kids will eat it plain too. Top it with fresh or frozen fruit, and/or nuts, and enjoy!
Cream of Wheat Porridge
Ingredients
- 4 cups water
- ¼ tsp salt
- 2 cups coarsely milled whole wheat (Ancient grains are our favorite, but either hard or soft wheat work just as well)
Instructions
- On medium heat, bring four cups of water to a boil in a medium size pot and add the salt.
- Grind two cups of wheat on a coarse setting of your mill. (See above pictures for reference.)
- Using a whisk, stir in the course wheat slowing and break up any lumps that form. Reduce the heat to low and gently stir with a wooden spoon for another minute or two as it thickens. Serve hot with butter, cream, sweetener and toppings of choice.
